Spinach and Borenkol Stew

Spinach and Borenkol Stew

Ingredients:

  • 3 medium size fresh tomatoes, chopped
  • 1 medium paprika, chopped
  • 1 medium onions, chopped
  • 1 habenero pepper to taste
  • 3 tablespoon olive oil
  • ½ cup water or stock
  • 1 handful spinach
  • 3 handfuls borenkol, cut
  • 2 teaspoon West African Seasoning Mix
  • ½ salt to taste
  • 1 boullion (optional)

Directions:

  1. Chop onions, fresh tomatoes, paprika and fresh Habenero pepper.
  2. Put oil on a clean pot, and then add chopped onions and allow to fry for 1 minute.
  3. Add chopped paprika, tomatoes and pepper. Allow to cook for another 3 minutes.
  4. Add 2 teaspoon of West African Seasoning Mix, salt and bouillon (optional). Stir well.
  5. Add spinach. Stir and immediately add borenkol
  6. Cook for another 2 minutes and bring down
  7. Serve with plain rice or boiled potatoes
