Jollof Rijst spice blend pack
Jollof rice is a hugely popular West African dish. The rice slowly absorbs all the liquid and spices leaving a tasty base to which fish, meat or vegetables can be added or served separately to make for a hearty meal.
For the rice:
- 500g rice Long grain or parboiled Basmati)
- 4 Tablespoon sunflower or olive oil
- 1 Medium onion
- 1 Tin tomato puree (35g)
- Tomato blend (3 medium tomatoes, 1 small red bell pepper), 1 small onion)
- ½ Litre chicken stock, ½ litre water
- Fresh pepper blend (to taste)
- 1 Seasoning pack (Optional)
- 2 Teaspoon Ataro Jollof spice blend
- 2 Bay leaf
- Salt to taste
- Green Peas for garnish (optional)
Directions:
- Parboil rice in boiling water and thoroughly wash and drain in a sieve. Set the washed rice aside.
- Tomato Blend: Blend tomatoes. paprika and onions and set aside
- Put vegetable oil in a pot, allow it to heat up and add onions and sauté until soft. Add tomato puree and fry until the acid content is reduced.
- Add the tomato and pepper blend and fry for another 5 to 10 minutes.
- Add approx. ½ litre chicken stock and ½ litre water.
- Add spices and bring the mixture to the boil.
- Add the rice, cover and allow it to cook until soft. Reduce the heat and allow it to simmer until the liquid is completely dried
- Place in a serving dish and garnish as required.
Tip:
Serve with Ataro spiced grilled chicken and fried plantain.
